History of Jordan Almonds

What makes jordan almonds the traditional wedding candy? The combination of bitter (almonds) and sweet (sugar coating) represent the bittersweet of marriage. Sugared almonds have many names and have a long history of being served at weddings and other important occasions. The Italian tradition of jordan almonds date back centuries and are known as "confetti." Greeks know them as "koufetta." Jordan almonds are often used in odd numbers. Odd numbers are indivisible, symbolizing how the newlyweds will share everything and remain undivided. Using five jordan almonds represents five wishes for the bride and groom: health, wealth, fertility, happiness and longevity.

The best of the best jordan almonds are called "confetti." Confetti is made with almonds with a sugar only coating and can be expensive. Jordan almonds have a mixture of starch with the sugar coating. The more starch that is used, the lesser the quality of the jordan almond. Jordan almonds with little starch are easier to eat.

Jordan almonds are graded according to how much starch is used. Superfine or premium jordan almonds use the least amount of starch and are therefore the best quality of jordan almonds. And also the easiest on the teeth! Extra Fine or Standard Grade uses slightly more sugar than Super Fine and Premium grade.
